How to taste it
Side by side: Open all three at the same time. Pour a small glass of each and taste them together. Start with Limestone, then Quartzite, then Ironstone. The contrast is the point.
Over time: Open one per month and watch how each wine evolves. The Ironstone will keep changing for years. The Limestone will peak sooner. The Quartzite will surprise you at every stage.
With food: The Limestone loves lamb. The Ironstone loves slow-braised beef. The Quartzite loves something delicate — duck, quail, or a beautiful cheese platter.
