This wine was handpicked early in the morning to keep the berries cool, preserving the fruit's natural acidity. Once picked, it's transferred to our estate winery where we crush and destem the fruit where we cold soak the fruit on skins for 2 days. We then open ferment the juice on skins for approximately 20 days, to ensure maximum flavour profile has developed. Once the fermentation has finished, we tuck the wine away into older French oak (approximately 2-3-year-old oak) to ensure development in oak. 
This year, we actually added approximately 10% of the 2022 vintage to this wine to ensure that the wine is fresh, vibrant, and delicious.

On the nose, expect nuances of cherry, in particular maraschino cherry, wild herbs, and a touch of sarsaparilla. On the pallate it's super juicy, medium bodied, with vibrant red fruits dancing on the tongue. The cherry nose is copacetic on the palate and has a really delicate tannin structure beneath. 

We recommend drinking this wine now or be rewarded with cellaring for 8 years.
