Our 2019 Crabtree Estate Cabernet Sauvignon was made exclusively from fruit that we hand pruned and handpicked from our Watervale property. The vines are aged between 27 and 34 years old and are grown on rich, loamy terrarossa soils with limestone beneath. The grapes were handpicked in April, crushed and destemmed and then cold soaked for two days. A slow fermentation followed to ensure the wines full flavour potential. Finally, this Cabernet was then basket pressed and tucked away into French oak for 14-18 months for development.
The bouquet exhibits black fruits, wild spices and a lovely touch of mint. On the palate, the wine is firm and full bodied with rich black fruit and dark cherry. The touch of mint comes through on the palate with beautiful, powerful elegance.
We highly recommend this wine with lamb in any setting. This Cabernet will age gracefully for 10+ years in the cellar.
